A decent curry is a BLIMMING hard dish not to fall in love with, but HAVE you tried a kumara curry before?
Not even kidding… you’re about to have your MIND blown!
RECIPE:
Sautee the following ingredients:
Chopped garlic (as much as you like)
* 1 x chopped onion
* 1 x teaspoon ginger
* 1 x tablespoon of chilli flakes
* Cut one decent sized orange kumara up into small cubes and pop in the pan
* Sprinkle in a tablespoon of salt
* Pour over 2 cups of stock (your choice of flavour)
* 1 x heaped tablespoon of curry powder
Let it cook on a low heat for about 20 minutes (or until the kumara is cooked through.
* Rinse a can of lentils and add to pan
* Stir in a can of tomatoes
* 1 x 250ml of coconut milk
* Sprinkle over a tablespoon of salt.
* Stir in a whole bag of spinach
Serve on a bed of rice
